Sometimes the best recipe is almost no recipe at all. A little honey rounds out a warm cup of oolong without hiding its aroma.

What you’ll need
- 1 VoyaTea pyramid bag
- 250 ml water at 85–93°C / 185–200°F
- ½–1 teaspoon honey, to taste
- A small strip of lemon peel, optional
How to make it
- Warm your cup with a little hot water, then empty it.
- Add the tea bag and 250 ml freshly heated water.
- Steep for 3–4 minutes, then remove the bag.
- Stir in half a teaspoon of honey. Taste before adding more.
- If you like a brighter aroma, gently twist a strip of washed lemon peel over the cup and add it.
Keep the tea in focus
Start with less honey than you think you need. Oolong already has its own honeyed character, and the point is to complement it. Try your first sip plain, then add the honey and notice what changes.
For a plant-based version, use a little maple syrup or enjoy the tea without sweetener.
